Loco Quebec.

This recipe is awesome and simple. Veggies and fruits are expensive in Quebec but wine is cheap? Umm… Well, we had no choice.

Ingredients:
Bottle of wine
Cheese (any kind you can afford or you like)
Bread
Jalapenos (in this case, compliments of Lamond from Costco !!!$2.99 for a huge jar!!!)

Preparation:
1) Cut the cheese and bread.
2) Open the bottle of wine and serve.
3) Enjoy these items with some jalapenos.

Lamond’s special chicken.


This chicken is my favourite and possibly what made me fall in love with Brian since Lamond shared with Brian the recipe…

Thanks Lamond for cooking this chicken twice for me while we stayed with you, I appreciate it…

The recipe, not sure!!! He does not disclose the secret ingredients but the next time we cook it we will share the recipe with you, at least the one we follow…

Lucky day at "Buddy's fries".

If you are ever on your way to London coming from the West is a good idea to travel on the ferry from South Baymouth to Tobermory to get to your final destination. We did not realize that South Baymouth is part of an island, named Manitoulin Island, until we were enjoying a delicious meal with some locals on the “island”. We had stopped to take a picture when we met a couple who ended up inviting us to “Buddy’s fries where they really have an excellent menu, very affordable. We had a lucky day, very lucky day… Great company, great food.

First time I ate poutine and deep fried pickles, the chicken burger with feta cheese I had was extraordinary, Brian had beef on a bun but he would not share with me so I can’t comment.

This place is located on Hwy 6 towards the ferry terminal, before Green Bush Road as a reference. Make an effort to stop if you are in the area, trust me, you will not regret.




Pouchy Kenora sandwich salad

Finding a place on the side of the road has become easier, we can make our home pretty much anywhere. Ontario has so far the most expensive camping, we could get a hotel room for the same amount of money in other provinces but I have to say that their campgrounds are well taken care of. This easy dish was created on the side of the road about 40 km South of Kenora, Ontario.

Ingredients:
Thin buns or can also use pita bread
Tuna
Cheese
Cucumber
Avocado
Salt
Olive oil
Spicy green pepper

Preparation:
1) Open the thin buns and add the tuna and cheese.
2) Grill the bun.
3) Cut slices of cucumber and avocado and mix them up.
4) Add salt and olive oil to your salad.
5) Use a pepper to heat up and enjoy...

Minitonas 9 years.

Getting to Manitoba was great and to make it better we found actual free camping in Minitonas where we met a couple who have been travelling for 9 years, yes 9 YEARS!!! On their camper and not a big camper, a small camper with a lot of memories.
As we travel our recipes and our diet will improve, it is not easy to cook when either there is not much available (remember we are not on major highways) and/or we just need to recover from a long day of riding (our brain needs to process a lot of information)…

Ingredients:
Ham
Rice
Jalapeno
Onion
Mushrooms
Olive oil
Seasoning salt
Pepper

Preparation:
1) Cook the amount of rice needed and cover it when done to keep it warm.
2) Cook the ham with a bit of onion, mushrooms and jalapeno. Add seasoning salt and pepper to taste.
3) Serve the rice and on top the mix prepared in number 2.
4) If you worry about the secondary effect of the beans, let me tell you… when camping everything is forgiven…


No name dish.

We could not find a name for this dish, perhaps because it does not matter… Again we enjoyed it on the side of the road at a free campsite, well it was technically a picnic area but nobody was around and there were no signs saying “No camping” so we did…

Ingredients:
Tuna/fish
Rice
Carrots
Jalapeno
Onion
Mushrooms
Olive oil
Salt
Pepper

Preparation:
1) Cook the amount of rice needed and cover it when done to keep it warm.
2) In another pan use a little bit of olive oil to give some colour to a piece of onion, jalapeno, carrots and slices of mushrooms. Add salt and pepper to taste.
3) When serving place the rice, on top the mix created in number 2 and a little bit of can tuna or fish.

Sharon Walburg no veggies.

This recipe supposed to be something completely different, my mother in law prepared couple of things for us before we left, including cooked and uncooked veggies but by dinner time we had finished all the veggies, they were delicious!!! So, our dinner dish had no veggies…
Saint Walburg in Saskatchewan had a nice campsite so regardless we enjoyed our dinner and had a wonderful sleep in our new smaller tent given to us by my parents in law… Awesome… Thanks to both of you for being good to us!!!

Ingredients:
Cooked beans
Cooked potatoes
Cooked eggs
Jalapenos
Onion
Butter
Cheese
Cookies made by Sharon

Preparation:
1) Fry a piece of onion, jalapeno and the cooked potatoes with a little bit of butter.
2) In a different pan heat up the beans and add the mix prepared in number 1.
3) Once done serve and garnish with slices of cooked eggs and cheese.
4) Enjoy a little cookie with coffee if you happen to have one, we were lucky and had cookies made by Sharon.
