I like my brother, when he cooks…

Food is such an important aspect of our lives and can bring us together or apart. Luckily, it brings me closer to my brother and I truly enjoy when he cooks. I just wish he did it more often.

He is a professional chef and rarely cooks for family. I think something is about to change!!!

Thanks for the great meal Jorge… such a simple and tasty meal. No recipe for it, I just wanted to share with you my happiness.

Shake your Body and Memories baby!!!

Not anymore…
I just realized I am not 20 anymore, what a discovery!!! Oh my God, why didn’t I realize that before? Not sure, but everything for a reason and everything at the right time.
So, my lovely husband is always in the hope and desire to keep his wife in shape and he figured out how to improve our standard of eating and I have to say: thanks to people in my life like Patricia Chuey and Brian MD that I can feel the need to improve what I introduce to my body. The shakes are a new thing for us, we are shaking lots of good things in the blender (Kitchen Aid) to drink and enjoy every piece of what we buy: mangoes, berries, bananas, melon, oranges, papaya, chart, spinach, tomatoes, etc. So, please if you have a good combination that does not require anything other than fruits or veggies please let me know. You will be contributing with my well-being.
The latest shake we found to be quite tasty and simple: blueberries, bananas and oranges… the most delicious combination.

La Musa
A new coffee shop in the heart of Merida, near El Remate on Paseo Montejo. Owned by a young French guy and a Mexican girl this coffee shop will be offering a very unique concept of coffee + art, meaning that they will have live music while the customers enjoy a coffee and some of the goodies they produce.
I have not yet tried much from there other than the coffee and although coffee is average, the ambience is great: quiet and lovely.
I wish they do well because young/entrepreneurial people need to do well.

Root Beer
There is nothing better than making good memories alive. I was in Cordoba Veracruz visiting my mom and we had a lovely root beer at the same place we used to have it when I was a kid and I really enjoyed it…

A great time with Christophe!!!

You may remember my post “Never fool a chef… and more” or you may not but here is the thing: our friend Chef Christophe is awesome!!! And his wife is as awesome. We visited them in Bowen Island B.C. during the month of March and had a fantastic time with both of them.

Christophe introduced us to his Café and Bakery and delighted us with some of his dishes. If you have never been in Bowen Island, it is time to go and visit Artisan Eats. I loved the food and the pastries and the coffee and everything I consumed there. Thanks so much for everything!!!

Christophe is an excellent chef and together with his wife, they make for a great team. The location is fantastic and simply the ride to Bowen Island is an experience.

Catching up…

I have now the time and space to catch up with some good items.

New pressure cooker.
Back in September 2013 I acquired a pressure cooker, what a wonderful tool. I have been cooking since then a lot of beans and dishes that require a short period of time to become simply delicious!!!
My favourite recipe is to throw anything I want and to let it cook.

Mennonites’ cookies.
For $20 Mexican pesos you can get a little bag with delicious honey cookies. Where? Around the city of Merida, in spots like the corner of Home Depot (by the gas station).

Tacos PM.
If you are looking for a fancy option to eat tacos on Paseo Montejo, PM is the right place to go. However, a bit expensive and to my taste not the best in town, at least not my favourite place to eat tacos but an option. Good service, that is for sure.

Mucbi Pollo.
Someone would describe this dish as a large chicken/pork tamale pie. Our friend Fernando who knows about food and how to enjoy it, invited us to celebrate the Day of the Death with him and his employees and we ENJOYED the dish and the company so MUCH!!!
Let me tell you that Yucatecans only make this dish for this specific celebration and although some may go through the trouble of making it for another date most people are just waiting for the Day of the Death!!!

Tia’s food, Merida Yucatan. January 25th, 2014.
Tia is a good friend from San Diego and she is vegan. I love when someone has different eating habits than me and is able to share some of those habits. Tia’s food is fantastic and she went through the trouble of making Gnocchi for us. Here is her recipe…

“…I adapt it to make it vegan using tofu instead of ricotta cheese and I use pesto instead of the sauce they suggest, I also use kale or chard instead of spinach just because it stands up better and doesn't get as mushy s spinach when you cook it…” Adapted recipe below:

Ingredients:
For Gnocchi-
1 cup tofu blended with one table spoon of olive oil, salt and garlic to taste ( this makes the tofu taste more like cheese)
3 pounds orange-flesh sweet potatoes ( I roast them, then blend them in a food processor with the cup of tofu mix). Note: putting all of that in your blender was a challenge because of the small base so be prepared to spend a long time getting it to a creamy consistency or invest in a food processor.
1/2 cup freshly grated parmesan cheese (I use vegan parmesan)
2 teaspoons kosher salt
About 3 cups flour
**The Wetter the dough, the fluffier the gnocchi. The firmer the dough, the denser or chewier the gnocchi will be. I just add the flour until it just makes a very pasty wet dough and then use a heavily floured surface to hold it in shape.

For Assembly-
1/4 cup olive oil, divided
1 tablespoon minced garlic
1/4 cup sliced shallots
1 pound mixed mushrooms such as chanterelle, cremini, king trumpet, matsutake, and oyster* (brown the mushrooms separately with garlic and salt and add them to the greens at the end with the pesto sauce). If the pesto isn't very oily then you will need to add some white wine, water or stock to the pesto in the pan with the greens to make it into a sauce.
12 ounces baby spinach leaves, kale, or other greens of your choice
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

For Pesto-
Any nut you like (I used pistachios)
Lots of basil (at least one whole plant )
Lemon
Chili flakes
Salt, pepper
Olive oil and parmesan if you like.
**Add enough oil to make it the moistness and texture of pesto.

Preparation:
1. Make gnocchi.
2. In a large bowl, combine 3 cups sweet- potato purée and tofu or ricotta. Gently stir in flour, 1/2 cup at a time, until a soft dough forms.
3. Working on a floured surface, divide dough into 8 portions. Roll each portion with your hands into a 15in rope, then cut into 1in pieces, sprinkling dough with flour if it gets sticky. Transfer gnocchi to a rimmed tray lightly dusted with flour.
4. Bring a large pot of salted water to a boil. Reduce heat to medium-low. Working in batches of 15 to 20, drop gnocchi into water, stirring to prevent sticking, and cook until gnocchi are firm and float to top of water, about 5 minutes. Using a slotted spoon, transfer gnocchi to a strainer and then to a lightly oiled rimmed pan to cool.
5. Assemble gnocchi: heat 2 tbsp. oil in a large non-stick frying pan over medium-high heat. Add gnocchi to pan and cook, stirring often, until browned, 5 to 8 minutes. Transfer to a large serving dish (at your house I also added some pesto to this portion).
6. Meanwhile, heat remaining 2 tbsp. oil in a second large frying pan over medium-high heat. Cook garlic and shallots until fragrant, about 2 minutes. Add mushrooms and sauté until softened, about 5 minutes. Add pesto spinach, salt, and pepper; cover and cook.
**Leave whole any soft mushrooms such as oysters and slice or quarter large, dense mushrooms like the cremini and king trumpets.

Make ahead: prepare through step 3. Cover and chill up to 3 days or freeze up to 3 weeks.

Garlic
Salt
Avocado oil
Blackberry wine vinegar

Preparation:
I imagine we just mix everything together!!! Enjoy.

Thanks to Norma and Richard, our Canadian neighbours who invited us for dinner and shared the recipe with us. A lovely-healthy non-complex meal.
This hearty main is one of the most requested recipes from Whitewater Cooks (Whitecap, 2008) by B.C. chef Shelley Adams. Named after a favourite ski bowl at Whitewater Ski Resort in Nelson, B.C., it embodies healthy, fun West Kootenay living. This recipe makes more dressing than you need, but leftovers are excellent on chicken, rice, noodles or salad.

Ingredients:
2tbsp (30 mL) vegetable oil
2cups (500 mL) cubed extra-firm tofu
8cups (2 L) hot cooked brown rice
2 cups (500 mL) grated carrots
2 cups (500 mL) grated beets
2cups (500 mL) packed baby spinach
2cups (500 mL) slivered almonds, toasted

Dressing-
1/2 cup (125 mL) nutritional yeast flakes
1/3 cup (75 mL) Tamari or soy sauce
1/3 cup (75 mL) apple cider vinegar
1/3 cup (75 mL) water
2 tbsp (30 mL) tahini
2 cloves garlic, crushed
1-1/2 cups (375 mL) vegetable oil

Preparation:
In large skillet, heat oil over medium-high heat; fry tofu, stirring often, until brown and crispy, 10 minutes. Drain on paper towel–lined plate.

Dressing-
In blender, purée together nutritional yeast flakes, tamari, vinegar, water, tahini and garlic. With motor running, add oil in slow, steady stream. Blend until smooth. (Make-ahead: Cover and refrigerate for up to 1 week.)

To serve, divide rice among 8 bowls; drizzle each with 1 tbsp of the dressing. Top each with tofu, carrots, beets, spinach and almonds. Drizzle each with 3 tbsp of the dressing. You can also use chicken or beef or any other preferred meat.

Nevertheless…

Vegetarian Food.

I have always loved veggies and even though I am not vegetarian I eat very little meat. In this lovely evening with Debi and Tom I enjoyed so much their vegetarian cooking and look forward to more awesome recipes.

The pasta was fantastic and the zucchini dish was my favourite; however I did not collect the recipe… oh well… enjoy the pictures and later on I will ensure that Debi shares her recipes with me so I can share with you…

 

I have to add that being a vegetarian isn’t complicated as many claim; it is about love for food, imagination and knowledge and Debi has all that.

Never fool a chef… and more.

Dinner with Christophe, a lovely Canadian Chef and motorcyclist!!!
In 2012 we met Christophe at BOSA Foods, an Italian grocery store in Vancouver B.C., just before he departed on a motorcycle tour and of course motorcycles got us talking. To make a long story short, in April 2013 we ended up meeting in Merida Yucatan Mexico in his way back to Canada after Christophe’s fantastic experience through North and Central America. We spent couple of days visiting and enjoying the “Motorcycle Diaries”.
A night before he left town he took us out for dinner to a very nice place called “Trattoria La Pasta” on Paseo Montejo and we had no choice but to accept…

The “chef” at this place was silly enough to think he can fool a chef!!!
Christophe ordered an Italian Traditional CAPRESE Salad (tomato, Bocconcini, Mozzarella, Basil) that supposed to represent the 3 Italian flag colours: green, white and red, which started as a matter of fact as the "Margharita Pizza" created by an Italian chef for the princess Margharita in the 18th Century with the same colours, tomato sauce RED, Bocconcini WHITE, and basil GREEN. Well, guess what came out in half of the salad instead of Basil? SPINACH and of course when we got to the SPINACH portion, Christophe found out and the staff found out… Never fool a chef, come on…

And if you are ever in Bowen Island, do not hesitate to ask for Christophe Langlois, I am sure that if you are lucky to find his restaurant you will have a good time there.

Gorditas Doña Gorda.
Don’t be afraid, you will not become fat unless you eat them all… This place in downtown Merida (Calle 60 x 61) serves delicious gorditas (fatties) which are basically pockets made out corn flour filled with anything you may wish from the list: eggs, beans, chicken, pork, etc.
Lovely, lovely and economical; at about 1 for $10 Mexican Pesos, two are enough for a meal.

Not sure why they are called Peruvian Chickens but they are awesome. At about $80 Mexican Pesos per chicken you get a tender, lovely, lovely chicken... where? Near Sam’s Club on Av. Correa Racho in Merida Yucatan ;)

One of our favourite places in Merida… every Monday we can watch a movie for free with the purchase of our meal and since Brian and I share everything, we share a meal!!!

Bar La Ruina.
Ok, this place is amazing. Recommended by our Landlord, here you go for drinks but you end up full of food for free. Here is how it works:
1) Order a beer for about $30 Mexican Pesos and you get a table full of snacks from salads to ceviche, guacamole, etc…
2) Order a second beer for another $30 Mexican Pesos and they bring you more snacks, enough to go home and say: “I had lunch”.
3) Order a third beer for $30 more Mexican Pesos and you get a full meal from a Menu… and fresh desserts.
Can you imagine that? And since we were recommended by an important character there, we don’t have to wait for the third beer, we are offered a menu at the second beer…

February to April 2013 Food & Love

Walty’s Mom Muffins
Patricia Chuey is Walty’s mom and she is a fantastic individual. I will share with you not only one of her recipes but one of the products she makes for those who are gluten intolerant. But even if you are not gluten intolerant, I would recommend this blend, it is easy in the stomach and tastes great!!!

Ingredients:
1 ½ Cups of multipurpose baking blend
½ Cup of granulated sugar
1 Tsp of baking powder
1 Tsp baking soda
½ Tsp of salt
1 Egg
½ Cup of canola oil or melted butter
1 ½ Cups of override mashed bananas
1 Cup of fresh or frozen berries, optional

Preparation:
1) Preheat oven to 375oF/190 oC. Mist muffin tins with cooking spray.
2) In bowl, combine baking blend, sugar, baking powder, baking soda and salt.
3) In another bowl, beat egg. Add oil/melted butter and bananas. Mix well and pour into dry ingredients. Stir to combine. Fold in berries if using.
4) Divide into 12 regular or 24 mini muffin tins.
5) For regular muffins bake for 20-22 minutes, for mini bake for 13-15 minutes.

Salsalada.
This is the most fantastic legacy we could have from Antelma, my mom’s companion-friend-worker-everything. She makes this fantastic spicy salad that goes well with anything: tortillas, bread, on its own, on top of meat…

Ingredients:
Chiles habaneros
Radishes
Onion
Lemon Juice
Salt
Olive oil

Preparation:
1) Simply cut all ingredients thin, mix all together and pour in a lot of lemon juice, some olive oil and salt.
2) Let it soak for a while so the flavours are stronger.
