The unforgettable.

Out of anything in the world who would think that the nasty Christmas recipe of Brussels sprouts would be a fantastic meal, only if cooked by Robert.
It was delicious… I cannot stop thinking about it and in fact Robert made this dish twice for us. Really simple!!!
I thought to share this recipe with you because it has changed my life!!!

Ingredients:
Brussels sprouts
Garlic
Olive oil
Teriyaki sauce or Worcestershire sauce

Preparation:
1) Fry some garlic in oil and when it is brown add some Teriyaki sauce or Worcestershire sauce.
2) Cover the Brussels sprouts with this mix and bake for about 15 minutes at about 350 oF, then turn the Brussels sprouts around and leave them in the oven for another 15 minutes.
3) Once crispy take out of the oven and enjoy!!!

Don't touch it.

He is sweet… and he likes to touch before is even finished. This dessert is also sweet, light and lovely and it took some effort to keep Brian from eating it before I finished.

Ingredients:
Crackers (baked are very nice)
Peanut butter
Jam
Banana
Coffee

Preparation:
1) Add some peanut butter and jam to the crackers.
2) Eat this while having a banana blast.
3) Accompany with some coffee.

Scary night.

It was scary to have her going around our tent with a big flashlight but it was a pleasure to meet Gertrude, a Canadian lady who has lived in California USA for a long time and at 77 years old travels everywhere with Rascal her lovely dog in a camper. I totally appreciated the lesson, it does not matter the age to do the things we suppose to do. She introduced me to a great meal that I will cook from now on.

Ingredients:
Spaghetti squash
Pasta
Tomatoe sauce
Olive oil
Onion
Jalapeno
Cheese
Seasoning salt
Salt
Pepper

Preparation:
1) Boil the spaghetti squash.
2) Boil a little bit of pasta to add some weight to the meal.
3) Cook a piece of onion with jalapeno in a little bit of olive oil.
4) Once everything has been cooked mix it all together and add the tomatoe sauce. You may want to add some spices like seasoning salt or simply salt and pepper.
5) Serve with cheese on top.

Note: For those who never have used spaghetti squash, once it has been boiled you need to scoop the noodles out. It is better when baked but camping does not allow for that unless someone assists you with this part of the operation.


Archie's special.

This recipe is so simple but very special. Archie gave us a bag full of this wonderful meal that we will keep eating along our journey for sure!!! Now, let me tell you I never have tried such a wonderful jam… Eunice: thanks so much for sharing with us…

Ingredients:
Plain oatmeal
Raisins
Slivered almonds
Coconut flakes
Powder milk
Eunice’s jam (preferably)
Banana (optional)

Preparation:
1) Boil water.
2) Previously mix the oatmeal with the raisins, slivered almonds, coconut flakes and powder milk.
3) Add boiling water to the mix and let it sit. The amount of water added will depend on the consistency you like.
4) Once cooked add jam and banana if you like.
5) Enjoy!!! And repeat!!! It is good for you…

The perfect woman for the moose.

This is again one of those times when we are extremely fortunate to share with people full of energy and generosity. Wade and his family hosted us for few days and fed us MOOSE, moose that Wade brought home with his own efforts and his lovely wife cooked, a woman who knows how to cook wild meat.
Moose is soft and really tasty, the little fat I found does not even taste like fat…One day, I hope to learn how to get our own food.
The picture shows, in the left, moose meat and in the right deer meat. I prefer Moose for sure.


La langosta de Archie.

This dish was AMAZING!!! Langosta=Lobster…
It was the combination of great food + great people. Archie made our dream happen; we had lovely lobster in Nova Scotia.

Pasta Nova Scotia.

Nova Scotia… what can I tell you? Ummm… I totally fell in love with this place and the kind of people we have met. So that means we are DEFINITELY coming back…
This dish was created in the Cabot Trail, located in Nova Scotia and I hate to say it but I felt bad for the nice people we were camping with; we cooked this great meal while they were enjoying slim fast drinks… We offered some but they politely declined and the irony is that their budget for food was 6 times more than ours per day…

Ingredients:
Pasta
Zucchini
Tomatoe
Feta cheese (in oil with spices)
Mushrooms
Sausage
Salt

Preparation:
1) Cook some pasta, al dente preferably. Once cooked add the raw tomatoe, zucchini, mushrooms and feta cheese.
2) Dice the sausage and fry it (in its own fat), once cooked add it to the pasta.
3) Add some salt and any other spices you may have available but remember that the oil from the feta cheese provides already a great taste.
4) Enjoy!!!
